Its kitchen has been rethought: Zarin is now Zarin The Pan Asian, serving dim sum and Szechuan dishes, and in winter Zia opens in the citrus garden with Mughal grill and American BBQ.

The story of the Rambagh Palace Jaipur begins in 1835 with a garden house for the nursemaid of Prince Ram Singh II. It became a royal hunting lodge and, from 1925, the main residence of Maharaja Sawai Man Singh II, extended in the Indo-Saracenic style to plans by Sir Samuel Swinton Jacob. After independence the Maharaja had his palace converted – into India’s first luxury palace hotel. Taj has run it since 1972.

The Oberoi Rajvilas Jaipur, a 5-star hotel, tells its history differently.
